Slow Cooker Recipes: Quick, Easy Dinner Ideas

A lot of our clients ask us what the biggest keys to success are for eating healthy. If we could only choose one thing, it would be to always be prepared. When you make the healthiest choice the easiest choice, you set yourself up for success. Our brains are just biologically programmed to gravitate to the most effortless choice, especially when we are exhausted. If the easiest choice is a healthy one, we will automatically default to that food. So, set yourself up for success by prepping some healthy dinners ahead of time that you can easily prepare on those days where you need a break from the kitchen.

A really neat idea that we recently stumbled upon is the idea of ‘dump dinners’. You prepare the ingredients ahead of time and store the meal uncooked in the freezer until you need it. When you are ready to cook it, you simply thaw it overnight in the refrigerator or in a cold bowl of water and dump the contents into a slow cooker. Let it simmer while you’re at work or running errands and you’ll come home to a delicious, healthy meal.

We had our amazing volunteers here at NutritionRx pilot test some recipes for us and they came up with some great tasting choices!
